THIS Weightwatchers’ recipe adds a twist to chicken and has only four points or 295 calories per serving.
INGREDIENTS:
One x180g butternut squash, peeled and de-seeded
Low fat cooking spray
75g snipped fresh chives
Four x 150g skinless boneless chicken breasts
75g mild soft goat’s cheese
Four slices of Parma ham.
TO MAKE:
Pre-heat the oven to Gas Mark 6/200°C.
Cut the squash into finger- width chips. Spread out on a large baking tray and lightly coat with low fat cooking spray. Roast in the oven for 10 minutes.
In a bowl, mix the goat’s cheese with the chives. Cut a pocket in the thickest part of each chicken breast and spoon in the cheese mixture.
Tuck a slice of Parma ham over each chicken breast, covering up the pocket of stuffing.
Remove the tray from the oven, add the chicken breasts, stirring the butternut squash chips around.
Cook for a further 20 minutes until the chicken is cooked through.
Serve and enjoy!
